SALADS FOR ALL OCCASIONS

Salads are your chance to eat healthy food, without having to cook.
It is usually a combination of fresh vegetables, chopped and mix together and enhanced with a dressing. From this simple beginnings an amazing combination of different ingredients has emerged. A simple tomato can be chopped, sliced or cubed to be added to lettuce, arugula, kale or spinach.
If Brian O'Driscoll does not approve of a tomato to be added to a fruit salad, it is acceptable to add fruit to a salad. From old recipes of using watermelon and apples, it has now gone beyond the unthinkable.
The classics are still there but there is also that pure enjoyment when one taste an unthought of combination and one knows immediately that this new discovery will be part of the classics, if not in the culinary circles but in one's own collection of favorite recipes.
