COLOURFUL SALAD

A colourful salad which can be served on its own as a starter with crusty baguettes or with dips. The dressing makes it a bit different with the aroma of the fresh herbs.

Very useful to grow your favorite herbs and have them always handy as nothing can compare to the aroma of fresh picked herbs.

COLOURFUL SALAD

1 lettuce

1 large red pepper, chopped

1 large green pepper, chopped

1 large yellow pepper, chopped

1 english cucumbers, sliced

8 cherry tomatoes, halved

12 pitted calamata olives

Feta, crumbled

Dressing

Small bunch parsley

Small bunch fresh basil

Small bunch fresh oregano

2 cloves garlic

1/4 cup red wine vinegar

3/4 cup sunflower oil
2 teaspoons honey

1 teaspoon salt

Freshly ground black pepper

 

 

  • Place all the dressing ingredients in a food processor and blend for few seconds till chopped and combined.

  • Place the salad ingredients on top of the lettuces, sprinkle some salt and pepper and pour the dressing and mix thoroughly.
