POTATO SALAD WITH SOUR CREAM

A basic Potato Salad that goes well with any cold Chicken, Fish or Beef.

POTATO SALAD WITH SOUR CREAM

2 kg (4 lb) potatoes

3 tbsp white wine vinegar

4 hard boiled egg

2 chopped onions

1 small bunch fresh parsley or chives

¾ cup Creamy Mayonnaise

¾ cup  Sour Cream

4 tsp Dijon mustard (the grainy one)

4 pickled cucumber

 Salt and pepper

  • Peel, and cut potatoes in 4 and cook potatoes in large pot of boiling salted water.  The heat must not be to high, as you want the potatoes to cook through. Drain and transfer potatoes to a large bowl.

  • Drizzle vinegar over hot potatoes. Cool at room temperature.

  • Chopped hard boil eggs and picked cucumber.

  • Add eggs, pickled cucumber and onions to the potatoes.  Flavor to taste with salt and pepper.

  • Whisk mayonnaise, sour cream and mustard.

  • Pour over potatoes. Cover and refrigerate.
