POPPED RICE SALAD

The simple addition of popped rice to this very green and fresh salad gives an interesting crunchy flavour. 

POPPED RICE SALAD

1 ready assembled mixture of lettuce, rocket and watercress

2 Avocados, cubed. 

1 English cucumber, cubed.

Fresh Asparagus spears, blanched in microwave for 2 mn.

1/3 Cup White rice

2/3 Cup Sunflower oil

 

Dressing:

1/2 Cup Mayo

1/2 Cup Oil

1/4 Cup Vinegar

4 tbsp Sugar

Salt and pepper  

  • Arrange lettuce on a platter.

  • Top with all the other ingredients

  • Heat oil on stove, add rice and leave on stove till rice pops and turns dark brown. Remove popped rice from oil and drain in paper towel.  

  • Top with fried rice just before serving.

Serving Suggestions:

Serve as a starter on its own

Add cold meat, chicken or fish as an all in one dish.
