TABBOULEH SALAD

Tabbouleh is a Levantine vegetarian dish traditionally served as part of a mezze in the Middle East.  The main ingredient are Bulgur and aromatic herbs.

Tabbouleh Salad

1/2 cup bulgur or cracked wheat

3 small red tomatoes, cut in quarter

1 red onions very thinly sliced

2 cups parsley leaves, discard big stems.

1/2 cup mint leaves. 

1/4 tsp ground cinnamon

1/4 tsp allspice

salt and freshly ground black pepper.

juice of 1 lemon

1/2 cup sunflower oil

1 lettuce head, chopped

  • Place the bulgur in a bowl. Pour boiled water over it to just cover it. Let it soak for about 15 min, till bulgur is soft but still chewy. Drain and put in a bowl. Stir it with a fork every now and then to help it fluff up.

  • Put the chopped lettuce in a salad bowl.

  • Add the tomatoes

  • Chop the herbs in a food processor.

  • Add the onion and herbs. Add the bulgur. Season with the cinnamon, allspice, salt and pepper. Add the lemon juice and oil and mix well.

  • Let the salad absorb all the flavours for few minutes and serve.
