TABBOULEH SALAD
Tabbouleh is a Levantine vegetarian dish traditionally served as part of a mezze in the Middle East. The main ingredient are Bulgur and aromatic herbs.

1/2 cup bulgur or cracked wheat
3 small red tomatoes, cut in quarter
1 red onions very thinly sliced
2 cups parsley leaves, discard big stems.
1/2 cup mint leaves.
1/4 tsp ground cinnamon
1/4 tsp allspice
salt and freshly ground black pepper.
juice of 1 lemon
1/2 cup sunflower oil
1 lettuce head, chopped

Place the bulgur in a bowl. Pour boiled water over it to just cover it. Let it soak for about 15 min, till bulgur is soft but still chewy. Drain and put in a bowl. Stir it with a fork every now and then to help it fluff up.

Put the chopped lettuce in a salad bowl.

Add the tomatoes

Chop the herbs in a food processor.

Add the onion and herbs. Add the bulgur. Season with the cinnamon, allspice, salt and pepper. Add the lemon juice and oil and mix well.

Let the salad absorb all the flavours for few minutes and serve.
