SPINACH SALAD WITH FETA, WALNUT AND CRANBERRY

The sour taste of the Cranberry blends perfectly with this combination of Spinach, Feta and Walnut. Just add the basic salad dressing and let the flavours come through.

SPINACH SALAD WITH FETA, WALNUT AND CRANBERRY

250 g (1/2 lb) spinach

1 small red onion

50 g (2 oz) chopped walnuts

50 g (2 oz) crumbled feta

80 g (3 oz) cranberry

3 tbs sunflower oil

1 tbs balsamic vinegar

salt and freshly ground black pepper

  • Remove stem from spinach and chop leaves into big chunks

  • Slice the onions thinly

  • Add the walnuts, feta and cranberry

  • Season with salt and pepper

  • Pour the vinegar and let it soak, than add the oil

  • Mix the salad and serve
