MIXED SALAD LEAVES WITH AVO AND PISTACHIO

1 packet mixed salad leaves,
1 avocado cubed
1 red onion sliced thinly
2 tbs lemon juice
1 tsp dijon mustard
¼ cup sunflower oil
Salt and freshly ground pepper
A handful shelled pistachios

Spread salad leaves in a salad bowl

Add cubed avocado and sliced onion

In jar with lid, mix the lemon juice, oil, mustard, sugar, salt, and pepper, shake till emulsified.

Pour dressing on top of the leaves.

Sprinkle pistachios on top
Serving Suggestions
For a more substancial salad, top with crumbled feta, chickpeas, or canned tuna.
