WATERMELON, FETA AND OLIVE SALAD

Feta and Olives mixed with Watermelon makes an unusual combination. Very light salad to start a substantial meal.

Many theories surface for testing a watermelon:

It should feel havyer than expected when lifting it up

It should have a full sound when knocking it

A duller colour is prefered than a bright one

and the spot where it was sitting should be dark, the darker the better.

WATERMELON, FETA AND OLIVE SALAD

1 sweet, ripe watermelon

250 g (1/2 lb) feta cheese

3 tbs sunflower oil

1 tbsp vinegar or lemon juice

100 g (4 oz) kalamata olives

salt and freshly ground black pepper

  • Cut watermelon into chunks of about 4 cm. Place in a salad bowl.

  • crumble the feta on top. Drop the olives with few tbs of the olive oil.

  • Add the oil, vinegar, salt and pepper

  • Mix all together

TIPS

* If after many attempts you still can't choose a watermelon, get a half already cut at the supermarket. Just make sure that it is red and fresh.
