Creole cuisine is a combination of all the history of Louisiana. Occupied by Native Americans, than a French colony and for a brief period, a Spanish one. In addition, colonists imported numerous West African people as slaves in the 18th century.
From this "mixing pot" of different influences, the Creole cuisine was created.
Gambo from the West African "kilogombo" or "quingombo" and the French bouillabaisse, Jambalaya from Spanish "Paela". Bread Pudding - A dessert made from day-old or stale French bread.

Rice is one of the main ingredients of Creole cooking, and rice would be a suitable side dish for a Creole Chicken.

A Quiche for summer and a Soup for winter, would be a good starter for the Creole Chicken.

With so many influences in the Creole cooking, there is no problem finishing off with a French Chocolate Mousse or an Italian Zabaglione.

Some planning is required to enjoy this meal with friends. All can be cooked few days in advance. The salad should be prepared on the day. Reheat the Quiche and the Chicken and Rice in the oven and end the meal with a delicious Chocolate Mousse, from the fridge.
Quiches must be one of the most versatile starters, not only it offers an incredible variety of fillings; meat, fish or vegetables. They can be made with pâte brisée, cauliflower crust or crustless. They are ideal to serve as a Starter for a Dinner Party or as a Main Course for a Casual Lunch or Dinner. They can be served hot, cold or at room temperature.
The French Cabbage Salad is a very simple salad, relying on its simple ingredients, cabbage and apple, and a simple dressing to bring the flavour of the fresh ingredients. This salad can be made in advance as it gain flavour absorbing the dressing.
The Creole Chicken and Rice casserole has all the influence of the Louisiana Region. It is cooked together in one pot and all the flavours are mixed. Can be frozen.
The Chocolate Mousse is one of the best French dessert. Easy and simple to make. Can be made a day before.
Perfect menu if you want to spend most of your evening with your guests, as all can be either frozen or made a day before.

A very simple menu by replacing the Quiche with a Soup, so there is no need for a Salad as a side dish. The all in one Creole Chicken and Rice has also lots of vegetables and is perfect to serve as a main dish on its own. Fruit Zabaglione is very quick and easy.
