CHICKEN WINGS BATON ROUGE

WHAT TO SERVE WITH CHICKEN WINGS

Well worth the time needed to marinate the wings. Recipe inspired by Pol Martin.

Chicken Chutney

Marinade
24 chicken wings
1 cup beer or white wine
1 cup chicken stock
4 garlic cloves, peeled and puréed

1 tbs sunflower oil

2 tsp Worcestershire sauce
1 tsp hot pepper sauce

Seasoning
4tbsp butter
1 tsp cayenne pepper
1 tsp black pepper
1 tsp oregano
1 tsp basil
1 tsp thyme
1 tsp rosemary
salt

  • Remove tips from chicken wings.  Place wings in bowl and mix in marinated ingredients.  Marinate 2 hours in refrigerator.

  • Drain chicken wings and discard the marinate.

  • Melt butter on medium heat in an Electric frying pan. Add seasoning and chicken wings.  Mix well and brown on all sides.  Cover and finish cooking on high for about 15 min.

 

TIPS

* The chicken can also be browned in a cast iron pan and transferred into a preheat oven (230°C - 450°F) for 10 min.
