CHICKEN CHUTNEY

WHAT TO SERVE WITH CHICKEN CHUTNEY

A strong favorite, so simple that it does not even need to have the chicken brown before getting into the oven. A delicious crust forms from the spices, the melting skin and the chutney.

Chicken Chutney

8 chicken pieces

1 cup hot chutney

1 tbsp curry powder

1 tsp ground ginger

1 tbsp brown sugar

¼ tsp peri - peri or cayenne pepper

2 tbsp lemon juice

salt and freshly ground black pepper

 

 

  • Preheat oven at 180°C (350°F)

  • Stir the ingredients

  • Arrange chicken pieces in Pyrex with skin side up

  • Pour the sauce over the chicken pieces.

  • Bake in oven for 1 hour.

TIPS

* You can vary the strength of this dish by adding some chili paste or increasing the peri- peri.

 When you place the chicken in the oven, start preparing the “yellow rice” this should take you less than 15min and you can leave everything to cook unattended till ready.

Serving suggestions:

  1. Ideal to serve for a dinner with friends as one can prepare the dish in advance and pop it in the oven an hour before serving it.

  2. Serve with mash potatoes or "yellow rice"
