FRUIT WITH ZABAGLIONE

ARUGULA SALAD WITH GRAPES AVO AND WALNUT

4 egg yolks

1/4 cup sugar

1/2 cup white wine

1/2 cup cream

fresh fruit in season

  • Beat egg yolk with sugar until well mixed

  • Place a saucepan with water on low heat and place a bowl over it with the egg yolks.

  • Pour in the wine and beat the mixture until it thickens.

  • Cool the mixture by removing it from the saucepan and continue to beat it till cold.

  • Slowly mix the beaten cream.

  • Serve in individual glasses and garnish with fresh fruit in season.

TIPS

* One can use also can fruit if fresh fruit are not at hand.
