The Dips or Spreads can be made on the day or a day before and kept in the fridge.  You could take a shortcut and get them ready made from a speciality store. 
The Salad must be made 1 hour before and dressed before serving.

The Spinach and Beans is a great vegetarian dish as it has protein in form of beans.  It can be made on the day or either a day before and reheated.

The Spanish Rice is full of vegetable and is great mixed with the spinach and beans. Make it one hour before and keep it warm.

What a better way to finish off this very healthy menu with a Fruit Salad made on the day.

If one takes the shortcut of getting the Dips and or Spreads ready made, one ends up with a fairly easy menu to prepare. Of course nothing compares to a freshly home made Guacamole, but time is important and guests will be delighted to spend an enjoyable evening either way.
