SPINACH AND BEANS

WHAT TO SERVE WITH  SPINACH AND BEANS

 This is a dish where the beans are stewed in a tomato sauce together with spinach. The beans have a lot of protein and this is a perfect dish for vegetarians.

BAKED BEANS AND SPINACH

2 x 400 g (14  oz) cans butter beans or cannellini beans in brine

1 big onion

2 tbs sunflower oil

1 x 400 g (14 oz) can tomato purée

1 beef shin (optional)

1 bunch spinach

salt and white pepper

 

  

  • In a pan fry onions in oil till nearly black.

  • Drain beans.

  • Add shin and drained beans. Fry for a while till meat is sealed

  • Add tomato purée and top with water if needed to cover beans. 

  • Wash and chop spinach, and add to the beans. Let it cook for just few minutes till spinach is soft.

  • Season with salt and white pepper.

TIPS

* One can use frozen spinach and defrost them in the microwave for 1 or 2 minutes till soft and then add them to the beans.

Serving Suggestions:

Serve it as a Main for a Vegetarian Dinner.

Use it as a Side Dish for any meat Casserole or Roast.

Make a Side Dish with Spanish Rice to go with.
