SPINACH AND BEANS
WHAT TO SERVE WITH SPINACH AND BEANS
This is a dish where the beans are stewed in a tomato sauce together with spinach. The beans have a lot of protein and this is a perfect dish for vegetarians.

2 x 400 g (14 oz) cans butter beans or cannellini beans in brine
1 big onion
2 tbs sunflower oil
1 x 400 g (14 oz) can tomato purée
1 beef shin (optional)
1 bunch spinach
salt and white pepper

In a pan fry onions in oil till nearly black.

Drain beans.

Add shin and drained beans. Fry for a while till meat is sealed

Add tomato purée and top with water if needed to cover beans.

Wash and chop spinach, and add to the beans. Let it cook for just few minutes till spinach is soft.

Season with salt and white pepper.
TIPS
* One can use frozen spinach and defrost them in the microwave for 1 or 2 minutes till soft and then add them to the beans.

Serving Suggestions:
Serve it as a Main for a Vegetarian Dinner.
Use it as a Side Dish for any meat Casserole or Roast.
Make a Side Dish with Spanish Rice to go with.
