WHAT TO SERVE WITH RATATOUILLE
Bruschettas as a Starter.
A French Ratatouille as a Main Course with a Quinoa as a Side-Dish

Bruschettas are an Italian variation of the French Canapés, the bread is grilled and a served with a variety of fresh toppings.
Many of the Dips and Spreads can be used as a base and decorated with contrasting garnishes. Prepare them one hour before and make sure you have all the ingredients and decorations.
Ratatouille is a French ragout of vegetables; tomato, zucchini, aubergine,peppers and onions. It is seasoned with herbs to reflect its Provence origin; parsley, oregano and Basil. Depending on your time available it can be done on the day as it takes about half an hour to cook or you can make it ahead and keep it in the fridge for few days or freeze it.
The Quinoa can be cooked in advance and kept warm.
The South African Milk Tart or Melk Tart to give it's original Afrikaans name can be made a day ahead and kept in the fridge.
A very healthy vegetarian menu, which should satisfy even your non vegetarian friends.
