SOUTH AFRICAN MILK TART

Melktert, Afrikaans for "milk tart", is a South African dessert consisting of a sweet pastry crust containing a creamy filling made from milkfloursugar and eggs.

South African Milk Tart

For the Crust

1 cup flour

100 g (4 oz) butter

1tbs Backing Powder

1 tbs sugar

1 egg

1 pinch of salt

For the filling

2 cups milk

1tbs Maizena (cornflour)

3 eggs

6 tbsp sugar

1/2 cup desiccated coconut

1 tsp vanilla essence

  • Mix all dough ingredients.

  • Spray baking tin with spray and cook.

  • Press the dough into the baking tin.

  • Boil milk, add maizena and yellow of egg.  Add coconut, sugar vanilla and then fold in beaten egg white.

  • Pour mixture into shell and bake for 20min at 180°C (350°F).

  • When cool, decorate with cinnamon
