SOUTH AFRICAN MILK TART
Melktert, Afrikaans for "milk tart", is a South African dessert consisting of a sweet pastry crust containing a creamy filling made from milk, flour, sugar and eggs.

For the Crust
1 cup flour
100 g (4 oz) butter
1tbs Backing Powder
1 tbs sugar
1 egg
1 pinch of salt
For the filling
2 cups milk
1tbs Maizena (cornflour)
3 eggs
6 tbsp sugar
1/2 cup desiccated coconut
1 tsp vanilla essence

Mix all dough ingredients.

Spray baking tin with spray and cook.

Press the dough into the baking tin.

Boil milk, add maizena and yellow of egg. Add coconut, sugar vanilla and then fold in beaten egg white.

Pour mixture into shell and bake for 20min at 180°C (350°F).

When cool, decorate with cinnamon
