WHAT GOES WITH CHILI CON CARNE
MENU 1
A healthy Crustless Quiche of your choice as a Starter teamed with an
Arugula Salad with Grapes, Avocado and Nuts
The Chili con Carne as the Main Course with a Yellow Rice.
A refreshing Dessert of Strawberry Sorbet.
A menu which requires some cooking in advance, juggle your time, and take short cuts if you need. A ready made Quiche and/or Sorbet can save you time and effort.

The Crustless Quiche can be made any time, baked and than kept in the fridge for few days or it can be frozen and just reheat it in the oven before serving.
The Salad must be made 1 hour before and dressed just before serving it.
The Chili con Carne takes about 2 hours to prepare, most of it simmering to absorb all the flavour. If short of time on the day it can be made in advance and frozen. Just defrost it in the morning and warm it up for half an hour.
The rice is so easy that it can be made 1 hour before on the day and kept warm on an hot tray.
The Strawberry Sorbet is very easy and quick to make, but must be made in advance.

MENU 2
Replace the Quiche with Empanadas, and the Strawberry Sorbet with Fresh Fruit in Season.

The Empanadas are very easy to make once you have worked out the folding and assembling, a dish that can be used as starter or as a main dish for a casual dinner. They freeze very well and you can fill them with many different fillings. It is worth while experimenting with them and having them as part of your collection of food that please a crowd. A very simple dessert of cut fruit is a fresh ending to this menu.
