YELLOW RICE WITH RAISIN AND TURMERIC

This Yellow rice is very simple to make and goes very well with curry or spicy casseroles. Saffron is replaced with Turmeric to give colour and raisin are added to bring some contrast to hot dishes.

Serves 6 to 8

YELLOW RICE

4 cups water
2 cups long grain rice

2 tsp turmeric

¼ cup raisin

1 tbsp oil

1 tsp salt

 

 

  • Boil water, turmeric, raisin, oil and salt in pot with lid

  • When boiling add rice and stir. Cover pot and turn heat down to simmer

  • Simmer for 40 min. ( do not stir in between)

  • Rice is ready when all the liquid has evaporated. Can keep hot on top of hot tray or on very low heat.

TIPS

* To reheat rice, sprinkle some water and microwave on high for 1 min per portion.
