Make the Croutons in advance, very easy to make and add that special touch to the salad. Assemble the salad and keep it in the fridge.  Drizzle with the dressing before serving.

The Pineapple Upside down Cake is well suited to this light meal. Make it the day before and serve it with Ice Cream.
