WHAT GOES WITH A LAMB TAGINE

A Crustless Quiche with an Arugula Salad with Grapes, Avocado and Nuts as a Starter.
A Main Course of Moroccan Lamb Tagine and White Couscous as a side-dish.
A Fruit Salad for Dessert
The Crustless Quiche is a healthy starter for a rich meal as this one is not an Italian frittata but a baked crustless quiche. It can be made on the day or ahead and frozen.
Serve the Quiche with the salad full of interesting ingredient. You can assemble the salad one hour before and dress it before serving it.
The Lamb Tagine as all Moroccan casseroles has a mixture of sweet and sour that gives it a special flavour. As it takes about 2.5 hours in the oven, start making it well in advance or make it beforehand and freeze it. Just remember to take it out of the freezer in the morning and reheated before serving.
You must have a Couscous to complement the Tagine. Make it at the last minute as it take 10 min to make it.
Make the Fruit Salad on the day as the fruits lose their flavour very quickly.

You could try to do this whole dinner on the day, but the advantage of been able to freeze some of the dishes would make your evening more relaxing.
