SPICY LAMB PIZZA TOPPING
A spicy lamb topping with a Turkish influence similar to the "lahmacun"
Topping for 1 ready made pizza base. Double up for a Rectangular Pizza Dough

Topping
1 tbsp olive oil
1 onion, chopped
1 cloves garlic, crushed
250g (1/2lb) minced lamb
Salt and black pepper
1/2 tsp ground cumin
1/2 tsp paprika
1/4 tsp curry powder
1/4tsp ground cinnamon
1/4 tsp turmeric
2 tbsp tomato paste
Garnish
¼ cup tahini
½ lemon, juiced
50g (2oz) pine nuts, toasted
2 tbsp chopped flat-leaf parsley

Mix all the topping ingredients and saute in a pan with the oil. Drain.

Pour mince mixture on top the pizza base.
Baking
Follow direction of packaging for the ready made pizza base.

When pizza is out of the oven, mix tahini and lemon juice and season. Drizzle pizzas with tahini mixture, and then scatter with pine nuts and parsley.
