RECTANGULAR PIZZA DOUGH

The reason for a Rectangular Pizza is that it can be made bigger and serve 8 people for a vegetarian dinner. You make one Pizza instead of 2 big round ones. It does take time to make it, but you will end up with the Best Pizza and you don't need to make starters or  salads. You could use any combination of ingredients for the topping. Inspired by David Lebovitz - Party Pan Pizza.

RECTANGULAR PIZZA

Garlic Oil

1/4 cup (60ml) sunflower oil

2 cloves garlic, peeled and minced

Pizza Dough

500gr white bread or cake flour

A pinch of salt

7g brewer’s yeast

2 tablespoons olive oil

325ml warm water

1 tablespoon castor sugar

  • Mix the oil and garlic together and set aside for a few hours.

  • To make the dough, mix the yeast, the water and sugar in the bowl of mixer. Stir in the flour, the oil and salt. Knead for five minutes with the dough hook attachment, until a smooth, but slightly sticky ball of dough is formed. If it seems too wet, knead a bit more flour into it, if necessary. If too dry add water.

  • Cover mixing bowl with a kitchen towel and let sit in a warm place until doubled in size, 1 1/2 to 2 hours.

Bake the Pizza

  • To make the pizza, preheat the oven to 260ºC or the highest possible.

  • Place a heavy baking sheet on a rack on the lower third of the oven.

  • Take a tray or wooden board, as big as the baking sheet you will use to bake pizza, and lay a sheet of aluminium foil.

  • Sprinkle flour on the aluminium foil.

  • Place the pizza dough and roll and stretch it to be big enough to fit into the backing sheet.

  • Brush the dough with a thin layer of the garlic olive oil. Top pizza dough with the Pizza Recipes Toppings

  • Take the hot baking sheet from the oven and place it on a heat proof surface.  Take the tray with the pizza and slide the aluminium foil with the pizza onto the hot baking sheet.

  • Return the baking tray with the pizza to the oven and bake for 15 to 20 minutes on a middle shelve, or until the pizza is baked to your liking; the bottom crust should be crisp and the top should be slightly browned and bubbling.

  • Remove from the oven and sprinkle additional grated Parmesan cheese on top.
