ROAST CHICKEN
WHAT TO SERVE WITH ROAST CHICKEN
Roast Chicken like most roast has the advantage that one can roast the accompanying dishes at the same time. It is also a good idea to roast an extra chicken that one can use for simple casseroles (Very Easy Chicken Curry) or to serve as a Cold Chicken with Salads
Serves 4 to 6

1 chicken
1 whole onion
1 tbsp mustard
salt and pepper
1 twig fresh rosemary
1 tsp thyme

Pre heat oven to 180°C (350°F)

Clean chicken.

Insert whole peeled onion in chicken cavity, season with salt and pepper.

Spread top of chicken with mustard and sprinkle thyme, salt and pepper.

Place chicken with the mustard side facing up on a roasting tray

Place in oven for 30 min.

Turn chicken and spread with mustard and herb and cook for another 30 min.

Chicken is ready when juice from chicken is clear when pierced with a sharp knife and skin is brown and crispy.
TIPS

* Use the juice from the bottom of the pan to make a gravy : How to Make Gravy
* A Rotisserie Chicken is a great alternative if short of time. Serve it with Chips or Potato Salad and a Green Salad.
* Roast 2 Chicken at once. The second one is very useful to make toasted Chicken Mayo, Chicken Salad, Chicken Tetrazzini or Chicken Curry etc...
