CHICKEN CURRY
WHAT TO SERVE WITH CHICKEN CURRY
Roast chicken has become the biggest seller at supermarkets, use one of them to give you a head start in cooking this very easy and tasty chicken curry.
Serves 4 to 6

1 ready cooked rotisserie chicken
3 onions chopped
3 garlic cloves
4 tbs sunflower oil
2 cans - 400 g (14 oz) chopped tomatoes
6 tbs curry paste

Debone the chicken and chop it into small pieces.

Chop the onions and fry them in the oil in a pot with lid.

Slice garlic into thin slices and add to the onions.

When onions and garlic are soft and brown add the tomatoes with their juice.

Add the curry paste and mix.

Add the chopped chicken, mix and turn down the hot plate to medium low.

cook for about 30 min.
TIPS
* While the curry is cooking prepare the yellow rice and you will have both dishes ready at the same time and still have time to prepare the ramekins.

Serving Suggestions:
Serve with a selection of ramekins - chopped bananas - chopped pineapples - chop onions - chopped tomatoes - chutney.
