CHICKEN CURRY

WHAT TO SERVE WITH CHICKEN CURRY

Roast chicken has become the biggest seller at supermarkets, use one of them to give you a head start in cooking this very easy and tasty chicken curry.

Serves 4 to 6

Very Easy Chicken Curry

1 ready cooked rotisserie chicken

3 onions chopped

3 garlic cloves

4 tbs sunflower oil

2 cans - 400 g (14 oz) chopped tomatoes

6 tbs curry paste

  • Debone the chicken and chop it into small pieces.

  • Chop the onions and fry them in the oil in a pot with lid.

  • Slice garlic into thin slices and add to the onions.

  • When onions and garlic are soft and brown add the tomatoes with their juice.

  • Add the curry paste and mix.

  • Add the chopped chicken, mix and turn down the hot plate to medium low.

  • cook for about 30 min.

TIPS

* While the curry is cooking prepare the yellow rice and you will have both dishes ready at the same time and still have time to prepare the ramekins.

Serving Suggestions:

Serve with a selection of ramekins - chopped bananas - chopped pineapples - chop onions - chopped tomatoes - chutney.
