GUACAMOLE

Guacamole is an avocado-based dip that originated with the Aztecs in Mexico. By the time the Spaniards came upon the Aztec empire in the 1500s, the locals were making a sauce called "ahuaca-mulli," meaning “avocado-mixture.” This dip stands up by its simplicity, freshness and texture. Maybe the expression "HOLY GUACAMOLE!!" came after tasting it for the first time.

Serves 8 to 10

 2 ripe avocados

Juice of 1 lemon

1 crushed garlic clove

1/2 white onion finely chopped

Salt and freshly ground black pepper to taste

  

  • Mash the pulp of the avocados

  • Integrate all the other ingredients and season to taste

  • Cover with “plastic wrap” tight around the dip so that there is no air in between and leave in fridge till ready to serve.
    Use it within a day.

In sandwiches for lunch.
As a starter with Greek salad and fresh crusty baguette.
As a sauce for meat, fish and vegetables.

As part of a Bruschettas tray and decorate with chopped tomatoes
