CHORIZO AND MOZZARELLA PIZZA TOPPING
In Argentina, Uruguay, Bolivia, Peru, and Colombia, chorizo is the name for any coarse meat sausage. Argentine chorizos are normally made of pork, and are not spicy hot. Some Argentine chorizos include other types of meat, typically beef.
Topping for 1 ready made pizza base. Double up for a Rectangular Pizza Dough

200g (7oz) can chopped tomatoes
1 onions
2 garlic cloves
Sunflower oil
1 tsp oregano
100g (4oz) dry cured, spicy Chorizo Sausages, thinly sliced
200g (7oz) mozzarella
Fresh parsley
Salt and freshly ground black pepper
a pinch of sugar

Chop the onions and garlic

Place in a pan with oil and cook till soft and slightly coloured.

Add the tomatoes, salt, a pinch of sugar and oregano. Cook for about 30 min till thicken and mash it in a food processor.
Assembling the Pizza
Pour the sauce over the pizza base and cover it with the slices of Chorizo and Cheese.

Follow direction of packaging for the ready made pizza base.
