ROAST BEEF

WHAT TO SERVE WITH ROAST BEEF

One of the most enjoyable main course dinner, for family or friends. Easy to combine with Roast Potatoes and a Roast Vegetable. It can all cook at once, served together and enjoyed.

 6 to 8 Serving

ROAST BEEF

1.350 kg (3 lb) entrecote or sirloin

3 clove garlic

salt and freshly ground black pepper

 

  

  • Pre heat oven to 220°C (425°F)

  • Cut garlic into little strips, make insertion in roast and push garlic pieces into the meat

  • Season roast with salt and pepper and place on a rack on top of a roasting tray fat side up.

  • Place roasting tray in oven.

  • Leave it for exactly 15min and than open the oven door till the temperature drop to 150°C (300°F)

  • Close the door and live the roast for the time required as in the table below:

 

Calculate the amount of time the roast has to stay in the oven after the initial 15 min: for rare: 15 minutes per 450 g (1 lb)

 

Roast of 900 g (2 lb) (for 4 people)                 30 minutes

Roast of 1125 g (2.5 lb) (for 4 to 6 people)        38 minutes

Roast of 1350 g (3 lb) (for 6 to 8 people)          45 minutes

 

For bigger roast, its better to use 2 smaller roast, it gives you also the choice to have one roast rare and one medium or well done. The time to weight is calculate for each individual roast.

 

  • When the roast is ready, turn off the oven, open the door and live the roast to rest for about 15min. This makes it easy to cut and it retains its juice.

TIPS

Gravy

If using an entrecote or topside, there should be enough juice in the pan to make gravy. Refer to section of “How to make Gravy."
