MOAMBE KUKU CHICKEN STEW

WHAT TO SERVE WITH MOAMBE KUKU CHICKEN STEW

Moambe Chicken is a typical Congolese dish. It is cooked traditionally with Palm oil and Pili Pili and Bunga as a side dish. This recipe uses sunflower oil and Piri Piri which are standard staples ingredients but the flavour will be uniquely African. A Yellow Rice is suggested as a side dish. 

Serves 4 to 6

Roast Chicken

8 chicken thighs and drumstick

6 tbsp sunflower oil

1 large onion chopped

3 cloves garlic sliced

170 gr (6 oz) can tomato paste

400 gr (14 oz) can chop tomato

1 tsp ginger

1 tsp piri piri

1 cup water

Salt and freshly ground black pepper

1/2 cup peanut butter

  • Pour oil in a pot and brown the chicken pieces. Remove from the pot.

  • Add onion, fry till soft. Add garlic and when brown add the chicken pieces and the rest of the ingredients but the peanut butter. Turn heat down, cover and simmer for about ½ hour.

  • With a spoon take out 2 cups of the juice and mix it with the peanut butter.

  • Return the sauce and peanut butter to the pot and simmer, uncovered for another 15 min.
