FRESH TUNA IN MANGO SALSA
WHAT TO SERVE WITH FRESH TUNA IN MANGO SALSA
An unexpected blend of tropical fruit makes this simple baked fish very exciting.
Serves 4

600 gr Tuna Steaks
1 tbs brown sugar
2 tbs sunflower oil
1 tbs butter
1 tbs grated orange peel
salt and freshly ground black pepper
1 tbs chopped fresh mint
1 mango, 1 papaya, chopped.
seeds from 1 pomegranate
1 small jalapeno chili, seeds remove.

Stir together brown sugar, orange peel, salt and pepper and oil. Place tuna on a plate, rub with mixture and let marinate in refrigerator for one hour.

Mix together the fruits, mint and jalapeno and let them marinate in their own juice for an hour

Heat oil and butter in a grill pan or skillet to medium high heat and sear for 1 1/2 minutes per side for rare. Can make a thin cutting with a sharp knife to check. It should be opaque but not dry.

Spoon salsa over warm fish and serve.
