FRESH TUNA IN MANGO SALSA

WHAT TO SERVE WITH FRESH TUNA IN MANGO SALSA

An unexpected blend of tropical fruit makes this simple baked fish very exciting.

Serves 4

FRESH TUNA IN MANGO SALSA

600 gr Tuna Steaks

1 tbs brown sugar

2 tbs sunflower oil

1 tbs butter

1 tbs grated orange peel

salt and freshly ground black pepper

1 tbs chopped fresh mint

1 mango, 1 papaya, chopped.

seeds from 1 pomegranate

1 small jalapeno chili, seeds remove.

  • Stir together brown sugar, orange peel, salt and pepper and oil. Place tuna on a plate, rub with mixture and let marinate in refrigerator for one hour.

  • Mix together the fruits, mint and jalapeno and let them marinate in their own juice for an hour

  • Heat oil and butter in a grill pan or skillet to medium high heat and sear for 1 1/2 minutes per side for rare. Can make a thin cutting with a sharp knife to check. It should be opaque but not dry.

  • Spoon salsa over warm fish and serve.
