FISH CURRY

WHAT TO SERVE WITH FISH CURRY
An easy meal, healthy and spicy, although a curry is associated with Lamb and Chicken, this recipe of a baked curry fish is ideal to make a tasty meal with very little effort.

1.2 kg (2.6 lb) white fish (Cod,hake, kingklip) filleted
1 x 400 g (14 oz) tin chopped tomato
1 cup water
2 tbsp flour
3 onions chopped
2 cloves garlic chopped
2 tbsp butter
2 tbsp oil
3 tsp salt
Spices:
6 tsp hot madras curry powder
½ tsp peri-peri
½ tsp ground turmeric
½ tsp ground ginger (if available 1tbs freshly grated ginger)
12 black peppercorns
2 bay leaves

Prepare spices and place in a small container.

Saute the onions and garlic in 2 tbs butter and 2 tbsp oil, till onions are soft and brown.

Add the flour and salt and mix till incorporated.

Add the chopped tomatoes with their juice and the water. Add the spices. Scrape the bottom of the pan to incorporate all the flavors in the dish. Simmer for 20 min.

Place the fish in a pyrex.

Preheat oven to 180°C (350°F)

Pour Curry Sauce over the fish and and make sure fish is well covered. Bake for 15 to 20 min till fish is flaky.

Serving Suggestions

Serve with yellow rice.

Add ramekins of chopped onions, tomatoes, bananas and pineapple.
