BUTTER CAKE

A most versatile cake, serve it for tea as is or for dessert with ice cream and hot chocolate sauce. Ideal cake to decorate as a Birthday Cake, can take any shape or look, a Frog, a Heart or Superman. 

BUTTER CAKE

3 cups flour

1½ cup sugar

4 tsp baking powder

1 cup milk (low fat milk)

4 eggs

1 tsp vanilla essence

225 g (1/2 lb) butter at room temperature.

  • Pre heat oven at 160°C (325°F)

  • Spray a big rectangular bread tin - 32 cm x 12 cm (12" x 4") with non-stick cooking spray

  • Sift dry ingredients into food mixer bowl.  Make a well in center

  • In a jug mix milk, eggs and vanilla and stir.

  • Pour into flour mixture, stir with spoon and then beat well

  • Add butter, a spoonful at the time while beating

  • Pour into tin, making sure that the top is even.

  • Bake for 1 hour and 15 minutes – test if cake is cooked through by inserting a sharp knife. The knife should come clean when ready.

TIPS

* Very convenient also to bake it into 3 small bread loaf - about 17 cm x 9 cm      (6.5" x 3.5").

Bake them for 45 min.

Use one and keep the two others in the freezer. Can be taken an hour before to serve.
