BAKED FISH IN TOMATO SAUCE

WHAT TO SERVE WITH BAKED FISH IN TOMATO SAUCE

A baked fish in tomato sauce, has many origine from Greece, Turkey, Balkans and Italy, with few variations. The basic ingredients and the simplicity of these dish gives its special Mediterranean touch.

Serves 8 to 10

BAKED FISH IN TOMATO SAUCE

1.5 kg (3.3 lb) kingklip or cod fish filleted

1 onion, chopped

2 tbs sunflower oil

2 x 400 g (14 oz) can peeled and chopped tomatoes

2 cloves garlic

¼ cup dry white wine

½ teaspoon sugar

salt and black pepper

2 green peppers

1 tbs cornflour

1 tablespoon chopped parsley

  • Preheat oven to 180°C (350°F)

  • Sauté onions and green peppers in oil until onions are soft and slightly brown.  Add wine, tomatoes,cloves, sugar, salt and pepper.

  • Cover pan and simmer for 20 min.

  • Mix cornflour with some of the juice in a cup. When mix pour it into sauce to thicken it.

  • Add chopped parsley.

  • Grease baking dish with oil or butter.  Put fish in dish and pour tomato sauce over.

  • Bake for 35 to 40 min or until if flakes easily with a fork.

  • Serve immediately or can be served next day when cold.

  • Rice, pasta or mash potatoes goes well with it.
