VEGETABLE AND CASHEW NUT SAMOSAS

Serves 8

Vegetable and Cashew Nut Samosas

2 potatoes cubed

50 g (2 oz) chopped cauliflower

3 tbs sunflower oil

2 chopped onions

2 chopped green chillies

75 g (3 oz) chopped cashew nuts

1/2 tsp turmeric

1/2 tsp garam masala

250 g (1/2 lb) finely chopped mushrooms

50 g (2 oz) spinach

  • Boil the potatoes in salt water for 5 min.

  • Add the cauliflower and cook for a further 3 minutes and drain the water.

  • Heat the oil in a frying pan, add the onions, chillies and cashew nuts and cook for 5 min.

  • Stir in the spices and add the potatoes, cauliflower, mushrooms and spinach.

  • Cook covered for 4 min. The vegetables should be slightly crunchy.

  • Remove from the heat and let it cool.
