UPSIDE DOWN APPLE CAKE
This cake is what you go for when you feeling cold and in need of good old fashion warm pudding.

Apples
1 tbs butter
3/4 cup sugar
4 apples
Dough:
1/2 cup sugar
2 eggs separated
11/2 tbs cold water
1/2 cup flour
1/2 tsp backing powder
1/2 tsp vanilla.
125 ml (1/2 cup) fresh cream

Use first 3 ingredients. Butter pan, sprinkle with brown sugar, peel and slice apples, place in bottom of pudding dish in layers, until dish is about 1/3 full.

Bake at 180°C (350°) till apples are partially soft. Remove from oven

Make dough: cream yolks and sugar till creamy, add water, flour and backing powder, vanilla and lastly the beaten white eggs.

Pour dough mixture on top of apples and bake in oven at 180° C (350°) for about 30 min or until brown.

Run knife around side of pan to loosen cake. Place heatproof serving plate upside down onto pan; turn plate and pan over. Remove pan. Cool for 30 min. Serve warm or cool. Store covered in refrigerator.

Serve with cream.
