TUNA EMPANADAS

Empanadas de Atún

For 12 Empanadas

TUNA EMPANADAS

Filling

2 tbs sunflower oil 

1 small onion sliced thinly

1 green pepper sliced

1 red pepper sliced

2-3 cloves garlic, pressed and mince

1 tsp cayenne pepper

3 tuna can - 425 g (1/2 lb)

1 tsp of dry oregano

½ cup seeded olives, cut in slices

1 to 2 tsp capers

1 tsp lemon juice

Salt and freshly ground black pepper.

  • Warm oil in a pan, add onion, peppers, garlic and cayenne pepper till onions are brown and peppers are soft. About 10 to 15 min.

  • Add the tuna, mix and heat it together for about 5 min.

  • Add the rest of the ingredients, mix well. Add salt and pepper to taste.

  • Remove from the stove and cool.

  • Use the mixture to fill the empanadas.
