SPINACH AND FETA FILO PASTRY TRIANGLE
"SPANAKOPITA"
Spanakopita is the the most well known of these filo triangle. They are made with Spinach and Feta.
Makes 40 Filo Triangle

500g (1lb) Filo Pastry
300g (11oz) spinach, sliced very thin
2 eggs, beaten
250g (8oz) feta crumbled
salt and white pepper.
2 tbs sunflower oil

Add 2 tbs oil in a pot and warm the spinach till wilted.

When cool, squeeze the juice out to dry the spinach.

Mix spinach, eggs, salt, pepper and feta
-
Your filling for the Spinach and Feta Filo Triangle is ready.

Now ​follow direction for folding and cooking the Filo Pastry Triangle

TIPS
* The ladies from Izmir use 6 tbs parmesan cheese instead of the feta. It gives a more spicy taste.
