SPICY POTATOES SAMOSAS

Serves 8

Spicy Potatoes Samosas

250 g (1/2 lb) peeled and cubed potatoes

4 tbs sunflower oil

3 finely chopped green chillies

1 tsp grated fresh ginger

a pinch of cumin seeds

1 finely chopped onion

1 tsp coriander

1/2 tsp garam masala

1/2 tsp turmeric

salt

  • Boil the potatoes till soft. Drain and mash slightly.

  • Heat the oil in a frying pan and saute the chillies, ginger and cumin for 1 min.

  • Add the onion and cook till soft.

  • Add spices and salt. Cook for 2 min.

  • Stir in the potatoes.

  • Remove from heat and set aside.
