Buriquitas de Patatas

Traditionally the Buriquitas are made about half the side of the empanadas. 

For 24 Buriquitas or 12 Empanadas

Filling

2 potatoes, boiled and peeled

150g (5oz) cheddar cheese grated

3 tbs grated Parmesan

3 raw eggs

salt and pepper

1tsp peri peri

• Beat the eggs, mash the potatoes and mix all the ingredients together.
