PILAU RICE
Pilav, Pilaf, Pulao, Pilau, from the Ottomans, to India to Kenya this dish is cooked all over the world with different adaptation, this is a mixture of Turkish and Swahili Pilau.

2 cup Basmati rice, rinsed and drained
4 cup water
1 tbs sunflower oil
1 tsp salt
2 cinnamon sticks
6 cloves
6 cardamom pods
1 bay leaf
1/2 tsp turmeric
1/4 cup raisins

In a pot, saute spices and salt in oil until the cardamom pods start to pop, a couple of minutes. Add the water and bring to boil. Add the rice and the raisins.Turn down heat and simmer for 30 min till rice has absorbed all the liquid.

While rice is cooking, take a pan and add 1 tbsp oil, saute 1/4 cup of slivered almonds until golden.

When rice is ready, sprinkle rice with almonds.
