PILAU RICE

Pilav, Pilaf, Pulao, Pilau, from the Ottomans, to India to Kenya this dish is cooked all over the world with different adaptation, this is a mixture of Turkish and Swahili Pilau.

Pilau Rice

2 cup Basmati rice, rinsed and drained

4 cup water

1 tbs sunflower oil

1 tsp salt

2 cinnamon sticks

6 cloves

6 cardamom pods

1 bay leaf

1/2 tsp turmeric

1/4 cup raisins

  • In a pot, saute spices and salt in oil until the cardamom pods start to pop, a couple of minutes. Add the water and bring to boil. Add the rice and the raisins.Turn down heat and simmer for 30 min till rice has absorbed all the liquid.

  • While rice is cooking, take a pan and add 1 tbsp oil, saute 1/4 cup of slivered almonds until golden. 

  • When rice is ready, sprinkle rice with almonds.
