PEARS IN RED WINE

A great way to use Pears in season to make a great dessert. No need to choose ripe pears, just go to your fruit shop and get 8 pears.

PEARS IN RED WINE

8 Pears

1 cup of strong Rooibos tea

1 cup of red wine

1 cup of sweet wine (port, sherry, jerepigo,

it doesn't really matter)

100 g (4 oz) brown sugar

6 cinnamon sticks

1 tbsp  dry, grated lemon rind (a teaspoon of

lemon juice will do)

A few drops of red food colouring (optional)

A small packet of flaked almonds

  • Place all the ingredients except the pears in a saucepan and simmer until sugar has dissolved, then boil for five minutes and allow to cool.

  • Peel the pears carefully (don't remove the stem) and cut a thin slice off the base of each fruit so that it can sit up straight.

  • Place pears in pot and cover with the syrupy liquid, then poach for about 20 minutes until pears are tender but still firm.

  • Remove the pears and place them on a serving platter.

  • Boil the liquid until it starts going thick and syrupy. You might need to add some more sugar.

  • Allow liquid to cool and pour over pears.

  • Serve hot or cold with a sprinkling of flaked almonds.
