PEARS IN RED WINE
A great way to use Pears in season to make a great dessert. No need to choose ripe pears, just go to your fruit shop and get 8 pears.

8 Pears
1 cup of strong Rooibos tea
1 cup of red wine
1 cup of sweet wine (port, sherry, jerepigo,
it doesn't really matter)
100 g (4 oz) brown sugar
6 cinnamon sticks
1 tbsp dry, grated lemon rind (a teaspoon of
lemon juice will do)
A few drops of red food colouring (optional)
A small packet of flaked almonds

Place all the ingredients except the pears in a saucepan and simmer until sugar has dissolved, then boil for five minutes and allow to cool.

Peel the pears carefully (don't remove the stem) and cut a thin slice off the base of each fruit so that it can sit up straight.

Place pears in pot and cover with the syrupy liquid, then poach for about 20 minutes until pears are tender but still firm.

Remove the pears and place them on a serving platter.

Boil the liquid until it starts going thick and syrupy. You might need to add some more sugar.

Allow liquid to cool and pour over pears.

Serve hot or cold with a sprinkling of flaked almonds.
