NORWEGIAN APPLE CAKE
Very simple and easy to make, a combination of basic ingredients, loved by many.

2 standard eggs
200 g (7 oz) caster sugar
100 g (4 oz) butter
150 ml (2/3 cup) cream milk
1 tsp vanilla
175 g (6 oz) plain flour
3 tsp baking powder
3 to 4 apples
2 tbs brown sugar (to decorate)
2 tsp cinnamon

Spray with cooking spray a roasting tin or pyrex 20 x 30 cm (8" x 12")

Whisk the eggs and castor sugar, until the mixture is thick and creamy.

Place butter in a jug with the milk and vanilla and microwave for 1min or until butter has melted and pour over the egg mixture.

Sieve the flour and BP and fold carefully into the batter so that there are no lumps of flour.

Pour into Pyrex.

Peel, core and slicce the apples, arrange them over the batter.

Sprinkle with the brown sugar, and cinnamon.

Place in oven 180°C (350°F) for 20 to 25 min until well risen and golden brown.
