MANGO YOGURT PUDDING

"If you never ripped a mango from its tree, peeled the skin with your teeth and suck the juice running down your arms, you will not know what mango taste like."

Serves 8

MANGO YOGURT PUDDING

4 large mangoes, peeled and chopped

250 ml (1 cup) cream whipped with 1 tsp sugar

8 tbs demerara sugar

8 tbs thick Bulgarian (Greek) full cream yogurt

 

  • Place the mangoes chopped in a pretty glass serving dish or individual glasses.

  • Fold the yogurt into the whipped cream and pour over the mangoes.

  • Sprinkle with sugar and refrigerate until required.

TIPS

* One can use peaches, banana, de-peeped grapes or paw-paw.

* For best result use very ripe mangoes, and mix the cream with the mangoes. It may not look as pretty, but the taste is absolutely delicious.

* If any leftover, simply blend and freeze. Use it as Mango Ice Cream.
