HAMBURGER - 21 BURGER
WHAT TO SERVE WITH HAMBURGER
The best homemade burger from the famous club 21 in New York. The 21 Club is a restaurant and former prohibition-era speakeasy, located at 21 West 52nd Street in New York City.
There are so many stories about the origin of the hamburger that it alone will take up a couple of pages, not to mention start a heated debate. But the one story we like to believe to be true started way back in Mongolia where Mongolian and Turkish tribes known as Tartars often shredded low-quality beef from Asian cattle to make it more edible and digestible. Russian Tartars eventually introduced it to Germany before the 14th century where it was flavoured with regional spices and either cooked or ate raw (steak tartare). Serves 10

Burger
1.5kg (3.3 lb) mince meat
salt and freshly ground black pepper
Herb Butter
110 g (4 oz) butter at room temp
2 tbsp basil
1tbsp thyme
1 tbsp parsley
1/4 tsp salt
Freshly ground black pepper.
Garnish
lettuce, onion, pickled cucumber, tomatoes
To make herbed butter
Mix all the ingredients and place in plastic wrap, roll into a log (sausage) and freeze in wrap.
When ready to cook

Cut burger rolls in two.

Cut slices of tomatoes, onions, pickled cucumbers, shred lettuce.

Make burger (About 2.5 cm (1") high) but flat like a patty, cut each burger in half, height wise. So you have two thin burgers

Take herbed butter out of freezer and cut in thin slices.

Insert a thin slice of the butter in between the two thin burgers and close burger again.

Heat butter in a cast iron pan, when oil start turning brown, place burgers in pan, only when brown on one side, (about 2min) turn over and cook the other side. Do not press to accelerate the cooking as this will only take away the juices of the burger.

Assemble burgers.
TIPS
* Can be also grilled or braai.
* This burger does not need “ketchup” or any other sauce. Just enjoy the full flavour !!!
