GREEN BEANS AND PEAS SAMOSAS

Serves 8

Green Beans and Peas Samosas

4 tbs sunflower oil

1 tsp black mustard seed

2 chopped onions

1 tsp coriander

1tsp chilli powder

1/2 tsp garam masala

1/2 tsp turmeric

1/2 tsp salt

2 peeled and diced potaoes

1 diced carrot

150 g (5 oz) diced green beans (head and tail removed)

150 g (5 oz) peas

  • Heat the oil, add the mustard seed. When they start to pop add the onions and fry until soft.

  • Add the spices and when fragrant (about 1 minute) add the vegetables.

  • Cover and simmer for 15 min

  • Set aside to cool.
