CRUSTLESS SPINACH QUICHE

Crustless Spinach Quiche

1 kilo (2 lb) fresh spinach

4 eggs

2 boiled potatoes

2 cups grated parmesan cheese.

2 tbs fresh basil

2 tbs fresh chives

salt and freshly ground black pepper

  • Wash spinash, cut roughly, put in pot of boiling water and let it cook for about 4 to 5 min. Rince spinash in cool water and squize liquid out.

  • Mash the potatoes

  • Beat the eggs

  • Mix the spinach, potatoes, eggs, grated cheese, herbs and spices thoroughly .

  • Spray Pyrex 28 cm x 18 cm (11"x7") with non-stick cooking spray.

  • Transfer mixture on to Pyrex and bake in preheat oven 180°C (350°F) for +- 45 min or until top is golden brown.

  • Cut into squares and place on serving plate

  • You will know when ready when the top is brown and the sides come away from the dish.
