CRUSTLESS SPINACH QUICHE
WHAT TO SERVE WITH QUICHE
Serves 8

1 kilo (2 lb) fresh spinach
4 eggs
2 boiled potatoes
2 cups grated parmesan cheese.
2 tbs fresh basil
2 tbs fresh chives
salt and freshly ground black pepper

Wash spinash, cut roughly, put in pot of boiling water and let it cook for about 4 to 5 min. Rince spinash in cool water and squize liquid out.

Mash the potatoes

Beat the eggs

Mix the spinach, potatoes, eggs, grated cheese, herbs and spices thoroughly .

Spray Pyrex 28 cm x 18 cm (11"x7") with non-stick cooking spray.

Transfer mixture on to Pyrex and bake in preheat oven 180°C (350°F) for +- 45 min or until top is golden brown.

Cut into squares and place on serving plate

You will know when ready when the top is brown and the sides come away from the dish.
