CRUSTLESS SPINACH AND POTATO QUICHE

Crustless Spinach and Potato Quiche

2 Bunch Chopped Spinach

4 Large Potatoes

1 cup Grated Parmesan

1 cup Grated Cheddar

4 Eggs

2 Tbsp Butter

Salt and Pepper to taste

  • Boil spinach till tender, drain and dry spinach thoroughly.

  • Boil peeled potatoes and mash them.

  • Mix spinach, ¼ of the mash potatoes and 3 well beaten eggs, plus 1 cup of mixed grated cheese.

  • Spray Pyrex 28 cm x 18 cm (11"x7") with non-stick cooking spray.

  • Place mixture in pyrex.

  • Mix ¾ of the mash potatoes with 1 beaten egg and 1 cup of mixed grated cheese. Drop this mixture to form 12 mounds on top of the spinach.

  • Brush some melted butter on top of the mounds.

  • Bake in oven 180°C (350°F) for about 30 min till mounds are coloured.
