In Defense of Food: An Eater's Manifesto

Lots of inspiring versions of cakes are made with Chocolate, this one is a full on Chocolate Cake, no cream, no custard, nothing to distract from the pure joy of eating chocolate.

Chocolate Cake

14 g (1 tbs) butter

7 egg yolk

7 egg white

1 cup sugar

1 cup flour

2 tsp baking powder

200 g (7 oz) bitter chocolate

1 small Turkish coffee cup coffee (or strong coffee)

 

Turkish Coffee

  • Place one Turkish coffee cup of water (1/3 of a cup) and 2 tsp of sugar in a sauce pan

  • Let it boil

  • Remove from heat and place one full tsp of finely ground coffee (Mocha Java)

  • Return pot to heat.  Watch it like a hawk. When  coffee rise, remove from heat

 

Dough

  • Beat egg yolk and sugar in mixer till light and fluffy

  • Add flour and mix with a spoon.

  • Add cut pieces of the chocolate and butter to the Turkish Coffee in the sauce pan . When all is melted, pour into the mixture.

  • Beat egg white and spoon gently onto the egg mixture.

  • Spray cake tin with cooking spray.

  • Pour dough into tin and bake in preheated oven 180°C (350°) for 45min

  • Let cake cool and than place on cake plate ready to be iced.

Chocolate Icing

1 cup Turkish coffee

200 g (7 oz) bitter chocolate

1 tbs butter

 

  • Transfer Turkish coffee into a sauce pan on a low heat and add cut pieces of the chocolate and butter. When all is melted pour the chocolate icing on top of the cake, and let it drop on the side. Don’t be to worried about the unfinished look. 

  • Can decorate with half, peeled almonds placed at portions interval around the cake.

  • Refrigerate the cake so that the chocolate dressing hardens.

 TIPS

* Use a cake tin with a hole in the middle and pour the extra chocolate dressing in the middle to indulge the chocolate lovers.

* Slice the cake in half and spread with orange jam or with Caramel Condensed Milk.
