CHEESE CAKE

A typical South African Cheese Cake, the crust is baked together with the cheese filling. Cheese Cake and Milk Tart are the two more popular puddings in South Africa

4 x 20 cm  (8") diam pie dish (serves 8 each) or 2 x 25cm x 30cm (10' x 12") backing dish (serves 16 each). Use what you need and freeze the rest.

Cheese Cake

Crust

225 g (1/2 lb) margarine

4 tbsp sugar

½ tsp salt

2 tsp baking powder

2 cup flour

2 eggs

  • Cream margarine and sugar

  • Add eggs and mix

  • Add flour mixed with baking powder, mix

  • Divide dough into 2 balls

  • Place 1 ball in the middle of a tart pan and pat into shape.

 

Filling

1kg (2lb) full cream, cream cheese

1 cup sugar

4 egg yolks

1.5 tbs custard powder

1 cup cream

2 tsps vanilla essence

4 egg white beaten

 

  • Mix all ingredients in the order above and lastly fold in the egg white.

  • Spoon into prepared pan shell and bake at 180°C (350°F) for 25 to 30 min

TIPS

* One can divide the recipe in 4 to make just one cheese cake, but the work and time is the same and these cheese cakes do freeze very well and it is so handy to have a cake in the freezer that one can pop up in the oven and reheat in 20mn. (oven 180°C) (350°F) for those unexpected guess.
