BEEF EMPANADAS
Known in Argentina as Empanadas Criollas
for 12 Empanadas

Filling
1 onion chopped
2 tbsp sunflower oil
250g (1/2lb) mince meat
3 tsp cumin
salt and freshly ground black pepper
2 tbsp raisins
2 tbsp pitted green olive sliced
3 hard-boiled eggs chopped

Brown onions in oil

Add the mince and the seasoning

When meat is half cooked, add the raisin.

When meat is brown but still juicy, remove from heat and let it cool.

Add olives and eggs
-
Use about 2 tbs to fill up the Empanadas.
