BEEF EMPANADAS

Known in Argentina as Empanadas Criollas
for 12 Empanadas

Beef Empanadas

Filling

1 onion chopped

2 tbsp sunflower oil

250g (1/2lb) mince meat

3 tsp cumin

salt and freshly ground black pepper

2 tbsp raisins

2 tbsp pitted green olive sliced

3 hard-boiled eggs chopped

  • Brown onions in oil

  • Add the mince and the seasoning

  • When meat is half cooked, add the raisin.

  • When meat is brown but still juicy, remove from heat and let it cool.

  • Add olives and eggs

  • Use about 2 tbs to fill up the Empanadas.
