BAKED MASHED POTATO
Nearly as popular as the "potato chips" and possibly used more often as they are also combined with other dishes, like the famous British Shepherd's Pie.

1 kg (2 lb) potatoes
50 gr (2 oz) butter, chopped
1/3 cup hot milk
extra butter, to decorate

Peel potatoes and cut into large chunks. Cook in a large saucepan of boiling salted water for 20 minutes or until very tender but not falling apart.

Drain potatoes well. Return to saucepan over low heat. Shake pan gently until any remaining water evaporates.

Using a potato masher, roughly mash potatoes.

Add butter and hot milk to potatoes. Beat with a wooden spoon until fluffy. Season with salt and pepper.

Spread some butter to line a Pyrex. spread mashed potato, and decorate top by making stripes with fork. Cut small pieces of butter thinly and spread on top.

Bake in oven at 180° C (350°F) for ½ hour till top is nice and crispy.
TIPS
* Instant Mashed Potatoes are a good alternative if you short of time. Not quite the same as home made but still contains all the nutrients.
* Could finish of the Instant Mashed Potatoes in the oven to give it a homemade look.
